Jollof Meatball Sub – Simple Recipe
Using Kwikish Jollof Paste
Ingredients:

(Makes 2–3 subs)
- 250–300 g beef or pork mince
- 2 tbsp breadcrumbs
- 1 small egg (or ½ beaten egg)
- 1–2 tbsp Kwikish Jollof Paste (for the meatballs)
- Salt & pepper, to taste
- 2–3 sub rolls or hot dog buns
- 3–4 tbsp Kwikish Jollof Paste (for the sauce)
- ½ cup grated cheese (mozzarella/cheddar mix works well)
- 1 small red chilli, sliced (optional)
- A little oil for frying
Instructions
Step 1 - Make the meatballs
In a bowl mix: mince, breadcrumbs, egg, 1–2 tbsp Kwikish Jollof Paste, salt and pepper.
Roll into small meatballs (about 10–12).
Step 2 - Cook the meatballs
Heat a little oil in a pan on medium heat.
Fry the meatballs, turning, for 8–10 minutes until browned and cooked through. Remove from pan.
Step 3 - Make the jollof sauce
In the same pan, add 3–4 tbsp Kwikish Jollof Paste.
Loosen with a splash of water if very thick and warm for 1–2 minutes.
Add the meatballs back in and coat in the sauce.
Step 4 - Fill the subs
Lightly toast the sub rolls.
Spoon some jollof sauce into each roll, then add the meatballs.
Top with extra sauce and grated cheese.
Add sliced red chilli if you like heat.
Step 5 - Melt and serve
Put the filled subs under a hot grill for 2–3 minutes until the cheese melts and bubbles.
Serve hot.
