A simple, authentic recipe for West African Jollof rice, delivering bold, rich flavors in just a few easy steps. Perfect for any occasion!

Ingredients:

  • Kwikish Jollof Paste - 1 Jar
  • Rice (Golden Sella Basmati or Long Grain) - 2 Cups/400g
  • Cooking Oil - 2 Tbsp
  • Water - 2.5 cups/600ml
  • Salt - 2 level tsps (1.5 if adding bullion cubes) or to taste
  • Chicken Bullion - 1 cube (Optional)

Instructions

Step 1: Sauté the Jollof Paste

-Heat your cooking oil in a large pan over medium-high heat.

-Empty the jar of Kwikish Jollof Paste into the pan. Stir and allow it to sauté for 2-3 minutes to release the rich flavors.


Step 2: Add Rice and Seasoning

-Add your washed rice to the pan, followed by water, salt & bullion cubes. Stir to combine evenly.


Step 3: Cook the Rice

-Cover the pot with a sheet of foil to seal in the steam, then place the lid on top.

-Cook over medium heat for approximately 25 minutes, or until the rice is tender. Stir occasionally to prevent sticking.


Step 4: Fluff and Serve

-Once cooked, gently fluff the rice with a fork to combine everything fully.

-Serve the rice hot, garnished with chopped chili and parsley for a burst of color and spice. Pair with your favorite protein for a complete meal.


Chef’s Tips

-For an added smoky flavour, let the rice rest for 5 minutes off the heat before fluffing.

-This recipe pairs wonderfully with grilled chicken, fried plantains, or sautéed vegetables.

-Add a handful of frozen peas or diced carrots during the last 10 minutes of cooking for extra color and texture.
