Plantain Croquettes

Ingredients:
● 1 large ripe plantain
● 2 tbsp Kwikish Corned Beef Sauce
● 1 tbsp flour (or breadcrumbs), plus more for coating
● ½ egg (beat 1 egg and use half)
● Salt to taste (corned beef is salty already)
● Optional: pinch of pepper or smoked paprika
● Oil for shallow frying
Instructions
1. Boil or roast the plantain until soft, then mash.
2. Mix in Kwikish Corned Beef Sauce, flour, egg, and seasoning.
3. Form into small croquettes (round or log-shaped).
4. Chill for 15 mins or overnight if possible. Coat lightly in flour or breadcrumbs.
5. Shallow fry until golden brown and crisp, 2–3 mins per side.
6. Serve hot with a dipping sauce or a fresh side.
